The Blessed Carob

The algarrobo or carob tree (Prosopis pallida) is one of the most representative trees of the dry northern forests of Peru and one of the most common in the region of Piura. This blessing of nature germinates and grows in incredible dry areas by using any chance year of rain. Its leaves are excellent forage for livestock. Its fruit, which grows in pods, hangs by the thousands from every branch and contains a large amount of proteins, sugars, minerals, fiber and vitamin B complex. The fruit is boiled down to produce syrup called algarrobina, an excellent food supplement and fortifier.
